December can be a somber month for a lot of people so this episode should be<\/div>\n
a little cheerful.  Hope so anyway.  There may be doubt until the rice pudding<\/div>\n
comes out of the oven.  Rice pudding?  Marjorie found Grandma Freeman\u2019s<\/div>\n
cookbook \u2014 dated 1913 or 1915.  The Freeman family moved from the firestorms <\/div>\n
in Northern Ontario in 1914 \u2014 moved south to a rock covered 25 acre farm<\/div>\n
in Erin Township, Wellington County.  In addition to being a glacial dump<\/div>\n
10,000 years ago the tiny farm had five swamps.  It was cheap and Granddad, Edward <\/div>\n
Freeman, professional gardener, had just about run out of options. he got a job as<\/div>\n
a munitions maker in Toronto \u2014 no sense trying to make a living as a farmer<\/div>\n
or market gardener.<\/div>\n

So Grandma Louisa Freeman must have sent 30 cents and a mint 10 cent stamp<\/div>\n
to get this copy of the Five Roses Cookbook in 1914.  The book contains 900 true and<\/div>\n
tested recipes.  Tested?  Yes!  Some 750,000 of these books were sold\u2026at one<\/div>\n
point 50% of  the kitchens in Canada had a copy.<\/div>\n

Here is my choice for us to test.<\/div>\n

<\/div>\n
RICE PUDDING<\/div>\n

<\/div>\n
3 tablespoons of rice<\/div>\n
1 pint milk (2 cups noted Grandma Freeman)<\/div>\n
1 cup water<\/div>\n
Butter size of an egg<\/div>\n
1\/2 cup sugar<\/div>\n
1\/2 teaspoon cinnamon (or nutmeg)<\/div>\n
Pinch of salt<\/div>\n
Raisins may be added<\/div>\n

Put in oven and bake for 2 hours \u2014 do not disturb the rice.<\/div>\n
Take out and on top spread an icing made as follows:<\/div>\n

ICING<\/div>\n

<\/div>\n
2 eggs (whites)<\/div>\n
1 cup sugar<\/div>\n
1 cup raisins (chopped)<\/div>\n

<\/div>\n
Put in oven to brown. Before putting<\/div>\n
the icing on top, remove the brown that forms over the rice.<\/div>\n

<\/div>\n
Note: This was cooked in the oven of a wood stove.  Guess<\/div>\n
the heat necessary on your electric stove\u2026say 325 degrees<\/div>\n
or more.  How do I know this is a good recipe?  I don\u2019t<\/div>\n
know for sure \u2014 grandma folded the page  though.  Whether <\/div>\n
you fail or succeed is up to you.<\/div>\n
