EPISODE  788   TASTING MAPLE SAP \u2026 RIGHT FROM THE TREE<\/p>\n

The day began with sun and ended as bleak and dark as a Victorian novel.<\/div>\n
I was alone at the farm slogging through snowdrifts that collapsed inward<\/div>\n
with each footfall.   Instead of getting warmer the day was getting colder.<\/div>\n

Nothing was being achieved.<\/div>\n

<\/div>\n
Until I lifted  the lid of a sap pail hanging on a young maple tree.<\/div>\n
The pail was full and overflowing.   My mouth was dry.   So I was<\/div>\n
able to squeeze my head  into the sap pail and like a butterfly I unfold my<\/div>\n
proboscis and ingest the pure clear sap .  Sweet as a baby\u2019s-breath.<\/div>\n
Cool\u2026so cool.<\/div>\n

Small things can  give great pleasure..<\/div>\n

Andrew\u2019s evaporator is state of the art\u2026.the sap boiled down from 40 to 1 comes out a light brown colour<\/div>\n

When I did the boiling down 40 years ago, my maple syrup was as black as the night sky   Why?  because system I used was<\/div>\n
one big black sap pan.  Open… on top of  blazing pile of wood\u2026Lots of smoke and lots of ash.  Black syrup.   No wonder<\/div>\n
no one wanted the stuff.  I still have 1 quart around somewhere,   Even I won\u2019t touch it.  Another reason for rejection<\/div>\n
was lead soldered sap pails.  Lead poisoning.   It was a good thing it was rejected.<\/div>\n

Now join me\u2026.dip your tongue in this clear male sap.  Close our eyes.   <\/div>\n

I am told that some entrepreneur is now selling \u2018maple water\u2019\u2026.maple sap.  Check your supermarket.<\/div>\n
